Salmon recipes have become a weeknight staple in many households due to their easy preparation and healthy nutritional profiles. This traybake dish will make cooking even more enjoyable by easily transforming a few simple ingredients into an impressive and flavourful meal. The best part is that it can be made in just 45 minutes and serves four, feeding the whole family in no time.

How to make salmon more flavourfulIngredients
Traybake salmon
- 650g salmon filet
- Three tablespoons Dijon
- Two tablespoons mayonnaise
- Red pepper flakes, more dill, lemon wedge for serving
Dill potatoes:
- 700g Yukon baby gold potatoes
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoon salt
- 120ml water
- Three tablespoons butter, melted
- One garlic clove, grated
- One tablespoon freeze-dried dill, or three tablespoons fresh dill
Set your oven to 230C. On a baking tray, combine the potatoes with oil and a pinch of salt, spreading them out evenly. Pour a bit of water directly onto the tray. Roast for 30 minutes - this will allow the water to steam the potatoes while the heat gives them a golden, crisp finish.
After 30 minutes, shift the potatoes to the edges of the pan. Place the whole salmon fillet in the middle, skin-side down. Sprinkle with half a teaspoon of salt. In a small bowl, stir together the mayonnaise and Dijon mustard, then coat the top of the salmon with the mixture. Return the tray to the oven and bake for six minutes. After that, move it under the broiler for two to three minutes, positioning it close to the heat so the top of the fish browns. It's ready when the salmon easily flakes apart.
Combine melted butter with grated garlic and chopped dill, and drizzle over the hot potatoes. Finish by scattering dill and red pepper flakes over the salmon.
Just before serving, squeeze fresh lemon juice over everything, then break the salmon into large chunks and serve alongside the roasted potatoes.
